It’s the final of the Great British Bake Off, so I’m not going to wang on too much. All I will say is that this cake is not really a cake, in fact it’s no bake. Think of it as a gift to busy mums. Your son or daughter wants one of these sweetie illusion cakes for their birthday but you’re worried about making it last minute and it all being a disaster? Make this days ahead as there’s no sponge to harden and go stale. I made this for Aldi using all their ingredients and it was a HUGE hit with my lot. READ MORE
Well, it’s semi final week on the Great British Bake Off. What do you think of this series? It feels more sedate to me. That’s not meant in a negative way. I mean it well. It seems to have found its way back to where it came from. I like all the contestants, there feel to be less pantomime dames. It’s a happier, less controversial place this year. I wonder if this is in anticipation of being away next year before they start again on Channel 4 in 2018? Almost like having a little good will in the bag. Anyway, who cares. I’ve been working with Aldi and I have an amazing chocolate cake complete with chocolate collar that we made to celebrate all the wonderful Team GB medal wins. But you could adapt it for any ocassion – there are instructions on how to write any message into the collar. Yes, I love you all that much. There’s even a video:

It’s biscuit week and I feel a wave of nostalgia. I’ll be honest that I wasn’t especially worried about biscuit week before it started back in 2011. You see I’d taken my macarons to the audition so I knew they were okay with Mary and Paul (should they not have been abbreviated by now to ‘Pary’ or ‘Maul’? I think Maul is better, more fitting).

I am still in full Rio mode so I made a Brazilian inspired cake for you; a coconut and lime drizzle cake. It uses coconut milk rather than condensed milk, though the latter is deeply popular in Brazilian puddings and cakes. It’s as if they’re bathing in the stuff.
