Bacon, avocado & spring onion jacket potato – Lunch in 5 with McCain

I keep my week days busy. If I’m working from home then lunch is grabbed at the kitchen table whilst I tap away, writing up a new recipe. If it’s a non ‘working’ day where I look after Lawrence (almost 2) then lunch is again grabbed at the kitchen table, though my attention is on my pint sized company. Lawrence is very chatty these days, so as soon as the food is served he wants to sit next to me and chat away about his morning and of course, what he’s eating. We don’t have time to mess about. Delicious, nutritious food is needed fast!

Jacket potatoes fit the bill perfectly, apart from the need for long baking. I am not keen on microwaved jackets usually, they always seem a bit lack lustre to me – the skin too soft and the middle not fluffy enough. Well, McCain have come up with the goods, their microwavable jackets are pre baked in the oven before being frozen, providing a delicious oven baked taste in just five minutes.

At the moment Lawrence is a purist, he loves his jacket potato with butter or cheese. Or butter and cheese. Or peanut butter. In fact Lawrence loves everything with peanut butter. (Abbreviated to ‘peabut’, just to get his order across faster). Me? Whilst I love a cheese filled jacket, I do yearn for something a little more exciting, albeit still ready in 5 minutes flat and not requiring a specialist shopping trip.

Last week I made Boston beans, where I lifted the humble baked bean to new, slightly spicier heights. This week I have bacon, avocado and spring onion mixed with a little sour cream and chilli. The whole dish is ready in just five minutes flat, meaning there’s no need to plan ahead in order to enjoy that proper oven baked jacket potato taste.

Bacon, avocado and spring onion jacket

Cook Time: 5 minutes

Yield: 2

Ingredients:
  • 2 McCain Ready Baked Jacket Potatoes
  • 1 tbsp vegetable oil (optional)
  • 2 rashers of bacon, chopped with scissors
  • 1 ripe avocado
  • 3 spring onions, topped and tailed and finely chopped
  • 2 tbsp sour cream
  • 1 tsp black pepper
  • ½ tsp chilli flakes
Instructions:
Microwave the McCain Ready Baked Jacket for 5 minutes. Meanwhile, heat the oil in a medium pan, (or dry fry in a non-stick frying pan) and add the bacon. Stir and fry for 2 minutes until brown, then remove from the heat. Mash the avocado flesh with the rest of the ingredients before stirring through the bacon. Serve over the McCain jacket potatoes.
