I asked if you wanted the recipe and it turns out you did. So here she is.
Lots of great recipes like this in my books, Recipes from a Normal Mum, (available on Amazon, at The Works, Waterstones, WHSmith, The Book Depository and many smaller outlets) and The Power of Frozen (available exclusively in Iceland stores and through their website) which is just £2.99 at the mo! And no, the recipes are not just about frozen food. Every recipe has instructions of how to make with chilled ingredients too.

Quick and simple chocolate microwave pudding
Ingredients:
- 100g salted butter, plus extra for greasing the dish
- 100g castor sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 90g self raising flour
- 10g cocoa powder
Take a microwavable casserole dish approximately 22cm x 15cm and grease well with butter. Cream together the butter and sugar until light and creamy (I used an electric mixer but you could do this with a wooden spoon if you prefer) then add the eggs one at a time, beating well after each addition. Lastly beat in the vanilla, flour and cocoa. Spoon into the casserole dish, level with a knife and microwave for 6 minutes on high (800W). Leave to stand for 5 minutes before serving.
You could add a layer of jam or berries to the bottom if you wish before laying the sponge on top. This chocolate pudding will NOT win any beauty awards and is best eaten warm. We had ours with ice cream and it was gobbled up very fast indeed. Let me know if you tried it – you can leave a comment on here or on my FB page.
