I love an oven baked quiche as much as the next person but sometimes I have neither the time nor the inclination for making pastry. This recipe is a nifty way to get that quiche flavour; the carby hit usually provided by the pastry, instead offered by the egg soaked bread.
No, you don’t get the crumble and crunch that a traditional quiche shell offers, but what you miss in crunch you make up for in saved time. I reckon you can make this one serving quiche from start to finish in 5 minutes. Perfect for when a quiche craving strikes!

Serves 1
Quiche in a mug
Ingredients:
- 1 large egg
- 25mls milk
- 10g strong cheddar, grated
- 1 spring onion, cut into 1cm pieces
- 1 mushroom cut into 8 pieces
- 1 slice of ham, cut into 2cm pieces
- ½ slice of bread, torn into 2cm chunks
- Salt and pepper to taste
Beat the egg and milk with a fork in a microwavable mug. Stir in the cheese, onion, mushroom, ham and bread then stir well with a spoon until everything is well covered in the egg mixture. Add a little salt and pepper if you wish too.
Microwave immediately on high for 2 minutes. My microwave is 800W so if yours is a different wattage or you used a thick rimmed mug adjust the time accordingly. It’s ready when it’s slightly puffed up and the top pieces of bread are beginning to look crispy. Serve straight away.
