Garlicky sage and thyme vegetable bags

I am all about preparing ahead when it comes to Christmas day, injecting as much flavour as possible with no stress. So these vegetable bags are ideal. You can of course use whatever flavours you like but garlic, sage and thyme marry so well together it’d be rude to keep them apart. Here’s a little video if you prefer to watch rather than read:

Ingredients:

750g carrots, peeled and chopped
1kg parsnips, peeled and chopped
3 re-sealable freezer bags
3 tablespoons Sainsbury’s garlic oil
Sprinkle of sage seasoning by Sainsbury’s
Sprinkle of thyme seasoning by Sainsbury’s

Make sure the parsnips and carrots are sliced lengthways, so once they’re in the oven they’ll roast quickly and crispy. Place the veggies in a large bowl, then add 3 tablespoons of garlic oil, then a sprinkling of sage and thyme seasoning and mix this all up by getting your hands in. Then place in freezer bags, which is a great way of marinating anything because it keeps all of the oil and whatever else you’ve put into the marinade in the bag. Push the seal all the way, almost to the end, and then squash as much air as you can out and then just pop them in the fridge overnight.

The next day you just take your vegetables out the fridge and tip them onto a roasting tray and then into the oven — a preheated oven at 200ºC, that’s 180ºC in a fan or it’s gas 6. In jut 45 minutes they’ll be done!
