As easy as 1, 2, 3 cheese biscuits

The snow has turned to ice making it treacherous to set foot outside with a 5 week old baby and a boisterous toddler. Well, at least treacherous without Mr B who is an excellent second set of hands and eyes with which to toddler watch.

So, confined to the house after playschool had finished I decided a spot of baking with my first born was called for. Spot being the key word here as second born son cannot be trusted to be quiet for longer than about 10 minutes at the moment. Charlie and I set out on our mission to make cheese biscuits in 20 minutes flat; 10 of those minutes being spent in the oven.

The results were much appreciated by young Charlie who exclaimed ‘yummy Mummy!’ to me as he scoffed them warm. I’d like to think this was a comment on my appearance and general demeanour but alas, not even a son’s love can lie to that extent. Mr B said these biscuits were very moreish. I think they’d be perfect to accompany big slabs of cheese and olives, though perhaps in a more uniform shape than the Numberjacks.

The great thing about these biscuits is the fact that no written recipe is required. All important when you’re baking against the crying clock. Just remember 1oz cheese, 2oz butter, 3oz flour and one egg. As easy as one, two, three. (And one again.)

Ingredients:

Preheat the oven to Gas 4. Rub the butter into the flour, add the cheese and stir with a metal spoon. Then make a well in the centre, crack the egg into it and mix well with the same spoon until you have a slightly sticky doughy mess.

Flour your work surface and spoon the whole lot onto it. Then add some flour to the top of the sticky dough. Flatten with your palm until about half a centimetre thick, then cut out shapes and pop onto a baking sheet lined with greaseproof paper. Pop in the oven on the top shelf and bake for about 10 mins until they look a bit bubbley. Remove from the oven and let sit on the tray for about 2 mins before transferring to a wire rack to cool. Eat in front of CBeebies with a beaker of your drink of choice.
