I mostly eat lunch at home in the week. Lawrence (almost 2) and I grab something and sit at the table to eat together. Now we often have a busy morning at the museum, park, petting farm etc meaning that by the time we arrive home, one or both of us are ravenous. We don’t have the time or patience to prepare long recipes. We need tasty food and we need it now!
Jacket potatoes are a favourite with all of us, but they’re rarely a lunchtime option as they just take too long. Sure, you can use the microwave from start to finish but the results are often a little limp and claggy. I like the baked flavour of jacket potato skin and the fluffiness of the inner flesh that results from long baking too.
Well McCain have come to the rescue, their microwavable jackets are pre baked in the oven before being frozen, providing a delicious oven baked taste in just five minutes. With such a short amount of time before the jacket is ready to serve, I have developed 4 filling ideas that are all tasty, speedy and totally achievable in the time in takes to cook the jacket in the microwave. Who wants to shop for specialist ingredients for a mid-week lunch?
First up we have Boston beans where I lift the humble baked bean to new heights
with the power of a little bacon, onion and some store cupboard ingredients.
The whole dish is ready in just five minutes flat, meaning there’s no need to plan ahead in order to enjoy that proper oven baked jacket potato taste.

Cook Time: 5 minutes
Yield: 2
- 2 McCain Ready Baked Jacket Potatoes
- 1 tbsp vegetable oil
- 1 medium onion, peeled and roughly chopped (or use frozen, ready diced onion)
- 2 rashers of bacon, chopped with scissors
- 1 tsp mustard
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar
- Pinch of salt
- 1tsp black pepper
- 1 x 400g tin baked beans
Microwave the McCain Ready Baked Jacket for 5 minutes. Meanwhile, heat the oil in a medium pan, add the onion and bacon. Stir and fry for 1 minute until starting to brown. Add the mustard, Worcestershire sauce, sugar, salt, pepper and baked beans. Stir and leave to simmer for the remaining 4 minutes. Serve the beans over the McCain jacket potato. You could add a side of sweetcorn or salad if you wish.
